Prep time 15 minutes
2 cans black-eyed peas, rinsed and well drained
2-3 Roma tomatoes, diced
1 medium Red onion, finely diced
3-4 green onions, finely chopped
1/4 cup green bell pepper, finely diced
2-3 jalapeno's, Seeded and finely diced
1/4 cup finely chopped fresh cilantro
1/2 tsp. salt
1/4 tsp. ground black pepper
juice of 2 limes
2 tblsp. olive oil
Stir all ingredients together in a large bowl.
Cover and refrigerate until the flavors blend.
Serve with tortilla or corn chips.
