Shrimp Melts

1 loaf (16 oz.) French bread
1 lb. cleaned shrimp, diced
1 cup salsa
2 avocados, peeled, pitted, sliced
2 cups (8 oz. package) shredded Mexican blend cheese

      Cut ends of bread loaf, then slice lengthwise and place on a baking sheet.  Combine shrimp and salsa in a skillet and sautè until shrimp is cooked and heated through, about 4 minutes over medium heat.  Layer avocado slices on bread, then stop with shrimp mixture.  Sprinkle cheese over shrimp.  Broil 2 - 3 minutes, until cheese is melted.  Cut into slices for sandwich servings or appetizers. 
Makes 4 - 6 servings as a main dish and 12 - 16 as an appetizer.
