2-1/4 tsp. baking powder
3/4 cup butter or margarine, softened

4 eggs
1 can (11 oz.) mandarin oranges, undrained
Frosting:
2 cups heavy cream
3 boxes.(4 oz. each) instant vanilla pudding
1 can (8 oz.) crushed pineapple, undrained
1/2 cup sugar

Heat oven to 350 degrees F. Grease and flour two 8 inch round cake pans. In a small bowl, whisk 4 and baking powder. Set aside. In a mixing bowl. Cream butter and sugar until fluffy. Add eggs, mixing well. Add entire can of mandarin oranges. Beat into batter, slightly crushing oranges. Slowly add flour mixture until well mixed. Spoon into 2 greased, round baking pans. Bake 25 - 30 minutes. Frosting Directions: Whip cream sugar and pudding mix until stiff peaks form. Apply to top, sides and between cake layers.
