1/4 cup butter or margarine
1/2 tsp. sugar substitute
2 eggs
zest of 1/2 lemon, grated
2 cups sifted all purpose flour
1-1/2 tsp. cinnamon
1 can (8 oz.) salted peanuts
Heat oven to 375ºF (190ºC). Cream butter. Add sugar substitute, eggs and lemon. Mix well. Add flour and cinnamon. Mix well. Add peanuts and stir. Shape into bars 1x1-1/2x1" thick. Pat firmly. Cover with waxed paper and allow to dry overnight. Bake 12 - 15 minutes. Let cool completely.
