Cajun-Style Chicken Nuggets

 

1 env. onion soup mix
1/2 cup plain dry bread crumbs
1-1/2 tsp. chili powder
1 tsp. each ground cumin, thyme leaves
1/4 tsp. red pepper
2 lb. boneless chicken breasts
enough oil

      In large bowl, combine onion soup mix (fixed as called for), bread crumbs, chili powder, cumin, thyme and pepper.  Dip chicken in breadcrumb mixture, coating well.  In a large skillet, heat 1/2" oil; cook chicken over medium heat, turning once, until done; drain on paper towels.  Serve warm and, if desired, with assorted mustards.
