Buttermilk Pie



3 eggs
1/2 cup butter or margarine, softened
1-1/2 cups white sugar
3 tbsp. all-purpose flour
1 cup buttermilk
1 tsp. vanilla extract
1 tbsp. lemon juice
1/8 tbsp. freshly grated nutmeg
1 (9") unbaked pie crust, or make your own single-crust 

      Heat oven to 350ºF (175ºC).  Beat eggs until frothy; add butter, sugar and flour.  Beat until smooth.  Stir in buttermilk, vanilla, lemon juice and nutmeg; pour into pie shell.  Bake 40 - 60 minutes, or until center is firm.  Makes 6 - 8 servings.
