TexMext Chicken

 

 

2 lb. Chicken tenders

 

1 lb. Tomatoes

 

1 small onion, chopped

 

2 Teaspoon Chopped Ginger

 

2 sprigs of calantro, chopped fine

 

2 clove Garlic

 

1 Teaspoon Salt

 

2 Tablespoon Vegatable Oil

 

1 Teaspoon Cumin

 

0.5 Teaspoon Chili Powder

 

Cook spices in oil and saute vegetables. Dice and cook chicken in seperate sauce pan and add to vegetable mixture. Cook for another ten minutes and serve over rice.
