General Tao's Chicken

 
This is my favorite chinese dish..I like it a little spicy ..good stuff :)
 


10 oz. chicken legs or thighs, deboned and skinned marinade

2 cups vegetable oil


1 tbsp. ginger root, minced


2 scallions, chopped


1 tbsp. garlic, minced


2 tbsp. dry chili peppers, chopped or whole

 

2 tbsp.  sugar

 

2 tbsp.  soy sauce


1 1/2 tsp. vinegar


2 tbsp. cornstarch


1/4 cup chicken stock


1 tsp. sesame oil


Marinade:


1 egg white


1 tbsp. each cornstarch, soy sauce


Cut chicken into pieces no larger then 1" square. Prepare marinade by combining egg white, cornstarch and 1 tbsp. soy sauce in a large bowl. I used a large resealable freezer bag. Add chicken pieces and marinade it for 2 hours in refrigerator. In a deep pot, heat oil until it reaches 350º. In a basket or with a slotted spoon, lower several marinated chicken pieces into the oil. Fry about 3 - 4 minutes or until chicken becomes crisp; test for doneness before completing the batch. Continue until all pieces have been fried. Set oil and cooked pieces aside. Prepare sauce. In a wok, on high heat, reheat 2 tbsp. reserved oil. Add prepared ginger, scallions, garlic and chili peppers. Stir to prevent burning. Add fried chicken and stir quickly. Add sugar, soy sauce, vinegar and cornstarch mixed with chicken stock. Remove from heat and stir sesame oil into sauce. poon mixture onto a hot platter and serve immediately with rice.
