Ham Skillet Gumbo

 
 

2 cups diced cooked ham, cubed 

 

1 cup chopped green bell pepper, chopped 

 

1 cup chopped onions , chopped

 

1 package frozen cut okra (10 oz)

 

1 can tomatoes (15 oz)

 

1 cup chicken broth

 

1 cup water

 

1 teaspoon salt

 

1/4 teaspoon black or cayenne pepper

 

1 cup uncooked rice

 

 Combine all ingredients except rice in a large, heavy skillet; bring to a boil.  Cover and simmer 10 minutes. Stir in rice and simmer, covered, 20 minutes longer, or until rice is tender.
Serves 4.
