Dark Chocolate Dipped Cocoa Macaroons

 
Where is the cookie monster? LOL
 
 

10 oz of sweetened shredded coconut


1 can of sweetened condensed milk (14 oz)


1 Tsp of pure vanilla extract


3 Tbsps of sifted natural unsweetened baking cocoa


2 large egg whites


1/4 Tsp kosher salt


1 1/2 cups of melted dark chocolate

Preheat the oven to 325 degrees.
Combine the coconut, condensed milk, and vanilla in a large bowl.
Stir in sifted baking cocoa.
Whip the egg whites and salt on high speed in the bowl of an electric mixer until they make medium firm peaks.
Carefully fold the egg whites into the coconut mixture.
Drop the batter onto sheet pans lined with parchment paper using a tablespoon.
Bake for 15 - 20 minutes, until golden brown and allow them to cool.
Dip half of the macaroon into the melted dark chocolate.
Set on Parchment paper and refrigerate until set.
