Here is another Asian Salad that is totally great.. There are so many recipes for this salad and all different !
It is a meal in itself...
3/4 cup red wine vinegar
1/4 cup sugar
1 teaspoon sesame oil
1 tablespoon olive oil
salt and pepper to taste
3 boneless chicken breasts, cooked & cubed
1/4 cup green onions, chopped
1 - 11 oz can mandarin oranges, drained
1 - 6 oz can water chestnuts, chopped
1/4 cup sliced almonds
1/3 cup rice noodles
1 small head Romaine lettuce, torn into bite-sized pieces
1. Combine the first 5 ingredients in a cruet & shake well.
2. Combine the remaining ingredients in a large bowl & toss.
3. Just before serving, pour the dressing (Step #1) over
the salad (Step #2) & toss.
