Sometimes we use a mixture of turnip greens, collards and mustard greens..equal ammount of each.. so good.
1 lb. smoked ham hocks
1 1/2 qts. water
1 to 2 hot pepper pods or 1 tbsp. crushed red pepper
3 cloves garlic, minced
4 lbs. fresh collard greens
1 med. onion, chopped
2 celery stalks, chopped
1 sm. green pepper, chopped
1 tbsp. sugar
1 tbsp. vegetable or olive oil
Salt and pepper to taste
Place Ham Hocks Dutch oven or large saucepan, add water, pepper pods and garlic. Cover; bring to a boil; reduce heat to low and simmer 30 minutes. Break off and discard stems of collards.
