Cinnamon Muffins

5 cups cake flour
2 tbs Baking powder
1 tsp. salt
2 2/3 cups milk
2/3 cup melted butter
2 eggs, beaten
1 tsp. vanilla
1 c. light brown sugar


Mix wet ingredients together.
Mix dry ingredients together.

Mix wet and dry ingredients

remove 1/3 of batter
add  1 tablespoon cinnamon
        1 tablespoon sugar
to the removed batter

fold the two batters together slightly
divide among 12 muffin cups

top with streusel topping:
    1/4 cup butter
    1/4 cup flour
    1/4 cup sugar
    pinch salt
crumbled together

bake at 425 degrees for 15-20 minutes, until top springs back
