COCONUT PECAN SWEET POTATOES

1.) Heat oven to 350 degrees.
 
Grease a 1 1/2 quart baking dish.
 
Pierce 6 sweet potatoes a few times.
 
 Place potatoes on paper towels in microwave.
 
 Microwave on high until very soft, 15 min.

2.) Slit potatoes and scoop pulp into a bowl.
 
 Add 1/2 cup orange juice, 1/4 cup brown sugar,
 
2 tbs unsalted butter and 1/2 tsp salt.
 
 Mash until smooth. Spoon into baking dish.

3.) In bowl, mix remaining 1 1/2 tbs butter,
 
 1/3 cup sweetened flaked coconut,
 
1/3 cup chopped pecans and 3 tbs flour until blended.
 
 Sprinkle over top of sweet potatoes.

4.) Bake 30 min. or until topping lightly
 
browned and potatoes are hot.
