A GREAT-GRANDMOM'S APPLESAUCE CAKE


1/2 cup butter

1-1/2 cup brown sugar

1 egg

1 cup applesauce

1 tsp salt

1 tsp cinnamon

1/2 tsp cloves

2 cups flour

1 tsp baking soda

3/4 cup raisins

1 cup hot water

Preheat oven to 350F.
 
Grease a 9" x 5" loaf pan.
 
Place raisins in a bowl and cover
 with hot water.
 
 Cream together the butter, sugar and egg.
 
 Dissolve the baking soda in the
applesauce and add to the creamed mixture.
 
 Combine 1-1/2 cups flour, salt,
cinnamon and cloves and add to the batter.
 
Drain the raisins, pat dry and toss
with the remaining 1/2 cup of flour.
 
Stir gently into the batter and pour into the
 prepared pan.
 
 Bake 1 hour and 10 minutes, until a toothpick
 inserted in the center comes out clean.
 
 Cool in the pan on a wire rack for 1 hour.
 
Remove from pan, slice and
serve with whipped cream or ice cream.
