Southern Sweet Potato & Orange Casserole

 
2 (16 oz.) cans sweet potatoes, drained
1/3 c. brown sugar, firmly packed.
1/4 c. butter, melted
1/2 tsp. salt
2 tbsp. dark rum or 1 tbsp. vanilla
11 oz. mandarin oranges, drained
1/4 c. chopped pecans or walnuts

Preheat oven to 375 degrees. Place sweet potatoes in large mixing bowl and mash. Stir
in 1/4 c. brown sugar, 2 tbsp. butter, salt, rum. Stir in oranges and scoop mixture into
greased 2 qt. baking dish. Combine nuts remaining brown sugar and butter. Sprinkle
over top. Bake 30 min.
