Orange Rolls easy & delicious

2 3/4 to 3 1/4 cups all purpose flour divided
1/4 cup sugar
1 package Rapid Rise yeast
1 teaspoon salt
6 tablespoons butter
1/4 cup water
2 eggs
1/2 cup sour cream

Filling:


1 cup sweetened coconut flakes
2 tablespoons freshly grated orange rind
3/4 cup sugar
2 tablespoons butter melted

Glaze:


3/4 cup sugar
1/2 cup sour cream
2 tablespoons orange juice
1/4 cup butter

To make dough:

In large bowl, combine 1 cup flour, sugar, yeast and salt. Heat butter and water until very warm (120 to 130 degrees. 
Stir into dry ingredients.

Add eggs and sour cream; mix well. Stir in enough remaining flour to make stiff dough. Cover and let rest 10 minutes.

To shape and fill:

In small bowl, combine coconut, orange rind and sugar; mix well. Divide dough in half. Roll each half to a 12-inch circle. Brush with butter. Sprinkle each with half of coconut mixture. Cut each circle into 8 wedges. Starting at outside edge, roll up each wedge to enclose filling. In a greased 13 x 9 x 2 inch baking pan, arrange rolls in two rows. Cover and let rise in warm draft free place until almost doubled in size about 30 to 45 minutes. Bake at 375 for 25 to 30 minutes, or until done.

In small saucepan, combine glaze ingredients. Heat to a boil, stirring constantly. Boil 3 minutes. Pour hot glaze over hot rolls. Serve warm. Yield 16 rolls.
