Zucchini Bread

3 eggs
2 cups granulated sugar
1 cup chopped nuts
2 cups flour
2 cups grated zucchini, unpeeled
1 tsp. salt
1 cup vegetable oil
3 tsp. each cinnamon, vanilla extract
1/4 tsp. baking powder
2 tsp. baking soda

      Heat oven to 350ºF (175ºC).  Beat eggs. 
 Add sugar, oil and zucchini.
  Sift other ingredients and add to previous mixture. 
 Add vanilla and nuts. 
 Pour into 2 greased and floured 9x5" loaf pans. 
 Bake 1 hour. 
 Makes 2 loaves.
