Peach Cobbler

1-1/2 tsp. cornstarch
1 tbsp. cold water
1 can (8-1/2 oz.) sliced peaches, undrained
1/2 cup biscuit and baking mix
2 tsp. sugar
2 tbsp. milk
1 tbsp. vegetable oil
optional: vanilla ice cream 

      Heat oven to 400ºF (205ºC). 
 In a small saucepan,
 combine corn starch and water until smooth;
 stir in peaches.  Bring to a boil; cook,
 stirring for 1 minute or until thickened. 
 Pour into 2 (8-oz.) greased custard cups.
  In a small bowl, combine biscuit mix and sugar;
 stir in milk, oil. just until moistened.  Drop by tsp.
 over hot peach mixture.  Bake,
 uncovered, 18 - 22 minutes, until topping is golden brown.
  Serve warm, top with ice cream.
