Caramel Apple Bread


4 eggs
1-1/2 cups oil
2 cups sugar
1 tsp. vanilla extract
3 cups each apples, peeled, diced; flour
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
1 cup walnuts
20 (+/-) caramels, cut into quarters

 
      Heat oven to 325ºF (165ºC).  Beat eggs; add oil,
 vanilla and sugar.  Mix.  Add dry ingredients. 
 Stir in apples and walnuts.  Pour into 2 (9x5") loaf pans. 
 Place 1/2 caramels on top of each loaf.
  Bake 1 hour, until pick inserted in center comes out clean.
  Serve warm with butter, or top with vanilla ice cream. 
 
 Makes 32 servings, 16 [1/2"] slices / loaf.
