Peach Shortcake-Diabetic

 
 
 
2 cups sliced peaches

2 tbsp. each granulated sugar replacement, divided; liquid
 
vegetable shortening

1/2 tsp. each almond extract, cinnamon

1 cup flour

2 tsp. baking powder

dash salt

1 egg

1/4 cup milk

 
Heat oven to 400°F. Place peaches in bottom of well-greased

8x8" baking dish. Sprinkle with 1 tbsp. sugar replacement,
 
 almond extract

and cinnamon. Combine flour, remaining 1 tbsp. sugar
 
replacement, baking

powder and salt in mixing bowl. Add shortening, egg and milk,
 
 stirring just

to mix. Spread evenly over peaches. Bake. Invert onto serving place.

Makes 9 servings-102 calories per serving.
