GARDEN-STYLE PASTA SALAD

OMG, you can't get enough of this salad.. I would make it at The Olde Store and everyone loved it..
 
 
1 pkg. garden-style twirl pasta (cooked)
 1/2 a bunch parsley, chopped
½ lb. salami, cubed
½ lb. Provolone cheese, cubed
1 ½ c. diced tomatoes
¾ c. black olives, sliced
¾ c. celery, chopped
¾ c. cucumbers, chopped
¾ c. bell pepper, chopped
1 large jar pimentos
1 bottle Italian dressing
1 c. summer sausage, cubed
1 c. ham, cubed
Mix all together and chill. Makes a lot!

TALK OF TEXAS CREOLE SALAD

 
Awesome!!!

3 c. cooked rice
4 chopped hard-cooked eggs
1 c. bacon bits
½ c. thinly sliced Talk of Texas okra
¼ c. pickle relish
½ c. chopped celery
½ c. chopped onion
½ c. mayonnaise
2 tbsp. French dressing

Mix all ingredients; chill.

PINK SALAD

Mom and I got this recipe from the Chuckwagaon Resturant in Austin back in the 70's... We loved this one :) 
 
1 sm. Can crushed pineapple
1 sm. Box strawberry (or raspberry) Jello
1 (9 oz.) carton Cool Whip
1 (9 oz.) carton cottage cheese
 
Mix together pineapple and Jello over low heat; remove from heat. Add Cool
Whip and cottage cheese. Put in mold and refrigerate until chilled.
 
You can add green grapes if you like :)

A couple Good Salads


This is my husbands Grandmother's Recipe, GOOD STUFF...
GRANDMA PARSONS?S SALAD
Break lettuce into bowl. Add tomatoes and 2 boiled eggs (cut up). Add mayo or
Miracle Whip and salt and pepper to taste. Mix well.

This is my husbands step -mother's recipe, Also Very Good...
ANNIE'S LETTUCE SALAD
Break lettuce into bowl. Slice in 2 bananas. Add 2 to 3 tbsp. sugar and 2 tbsp.
salad dressing (Miracle Whip). Best if chilled.

FRUIT SALAD

 
This is the best fruit salad for anytime of the year, I have been making it for years !
1 can Fruit Cocktail
1 lg. Cream Cheese
1 cup Coconut
1 cup chopped Pecans
2 cups Mini-Marshmallows
2 Banana's, sliced
 
Put juice from cocktail in a bowl. Add cream cheese and beat with a mixer to
blend. Add fruit cocktail, coconut, nuts and marshmallows. Stir to mix well.
Chill.
 
For a change you can add a box of Strawberry or Cherry Jello Powder and stir it in..

Pickled Okra

YUMMMMMM !!!
 
2 pounds small, tender okra
4 cloves garlic
4 jalapeno's peppers, hot or mild
1 quart white vinegar
4 tablespoons salt
1 tablespoon celery seed
1 tablespoon mustard seed
1/2 cup water
 4 pint jars with lids

Wash pint jars in hot water, then lids. Wash okra and place in jars. Put 1 garlic clove, 1 pepper in each jar. Bring vinegar to a boil. Pour over okra and seal. Let stand eight weeks. Crushed peppers may be substituted for whole peppers. Minced garlic may be substituted for garlic cloves.


Fig Strawberry Jam

 
You would never know it is figs :)
 
6 cups Peeled Ripe Figs
3 cups Sugar
Two 3 oz pkg Strawberry Jello

*** Combine all ingredients in large saucepan. Cook, stirring constantly, until thick (about 40 minutes).

Read General Water Bath Canning Instructions below.

Pack hot jam into hot jars leaving 1/4 inch head space and process pints 15 minutes in a boiling water bath canner.

Yield: 4 to 5 Pints

Tortilla Soup

This is delicous on a cold night, but is good anytime also :)
 
1 tablespoon vegetable oil
1 pound boneless, skinless chicken breast, cut into 1/2-inch chunks
1 red bell pepper, coarsely chopped
3 garlic cloves, minced
5 1/4 cups chicken broth
1 (10-ounce) package frozen whole kernel corn
1/2 cup salsa, your choice as to what kind.
1 cup broken-up baked tortilla chips
  1. In a soup pot, heat the oil over medium heat. Add the chicken, bell pepper, and garlic, and cook for about 3 minutes, or until the chicken is browned on the outside, stirring frequently.
  2. Stir in the chicken broth, corn, and salsa; bring to a boil. Reduce the heat to low, cover, and simmer for 5 minutes, or until the chicken is no longer pink.
  3.  Ladle into bowls, and serve topped with the tortilla chips.

Tex Mex Enchiladas

 
 
4 cups chicken, diced, cooked
2 cups  shredded Mexican cheese blend, divided
1 small red onion, chopped
1 (15-ounce) can enchilada sauce, divided
8 (10-inch) flour tortillas
  1. Preheat oven to 400°F. Coat a 9" x 12" baking dish with butter. 
  2. In a medium bowl, combine chicken, 1 cup cheese, the onion, and 3/4 cup enchilada sauce; mix well. Place equal amounts of mixture in center of tortillas.
     
  3. Tightly roll up tortillas and place seam-side down in baking dish. Top with remaining enchilada sauce and sprinkle with remaining 1 cup cheese.
     
  4. Bake 15 to 18 minutes, or until cheese is melted and enchiladas are heated through. Serve immediately.

Broccoli Cheese and Rice Casserole

 
My kids think they have to have this at every Thanksgiving and christmas meal.. I have fixied it for the last humpteen years .... ( Tammie does sometimes now )
 
3 cups of rice, cooked
1  bag frozen broccoli
1 large jar Cheez Whiz
 
1/2 lb of butter
 
1 can cream of mushroom soup

Cook rice and cut up broccoli. Mix in bowl. Melt butter in a large skillet and  Add soup until hot. Pour over rice and broccoli. Add Cheez Whiz. Mix well. Pour into casserole dish. Bake 45 minutes to 1 hour at 350F.

Mama's Fried Corn

 
I can see it now.. Mama cutting her corn off the cobs and adding to some lard in a iron skillet.. it getting a little golden around the edges.. then she added her salt and pepper and just a little water and put it in the oven to finish cooking,, Oh no wonder corn is one of my favorite veggies..
 
6 ears of corn , cut off cob
salt and pepper to taste
water
1/4 c lard ( shortening or oil )
 
After getting your corn ready heat your lard till nice and hot in a oron skillet, if you don't have one, use one that can be put in the oven, or transfer to a baking dish.
add corn and stir it around often till it get some golden pieces in it, Now add about 1/4 cup water and salt and pepper, put in oven at 350* until most of water is gone..
 
You can do it on top of the stove, and it is good, it is just better in the oven :) maybe because thats how mama did it :)
 
* NOTE*
You can use drained can corn or thawed frozen corn also !
use as many as you need,,
 
You may never eat plain corn again ..lol

Red Beans and Sausage

I love Cajun Food.. I didn't grow up eating it, but when I started cooking I leaned more toward the spicy side of life :). it has that little bite that makes it so good !
Spicy but not Hot.. I can't remember who gave me this recipe, but it is one of my favorites.
 
 
1 pound red kidney beans
 
1 large onion chopped
 
 
1 bell pepper chopped
 
1 garlic clove minced
 
 
1 pound smoked sausage cut in 1/2 inch pieces
 
1 ham-bone with some meat on it Optional but wonderful to use.
 
 red pepper to taste
 
salt and black pepper to taste
 
 
1 bay leaf
 
 
 
water to cover beans
 
Wash beans. In a large Dutch oven or cast iron pot, cover in cold water and soak overnight. When ready to cook, add the onion, bell pepper, garlic, bay leaf and ham-bone. Add enough additional water to cover the beans at least 3 inches above their marker. Cook slowly stirring occasionally until beans are tender. Time will vary from 1 1/2 to 2 hours.

In the last 30 minutes of cooking mash some of the beans to thicken the gravy. Add the smoked sausage and season to taste with salt and pepper. The heat may be increased to evaporate excess water if the beans have a too watery gravy or water added to make more gravy. Do stir to prevent sticking.
 
 Serve over steamed rice.

Macaroni and Cheese ~ Serves about 50 people.

 
This is great for a family reunion :)
Serves about 50 people.

6 lbs. macaroni
1 lb butter [ or margarine]
2 1/2 cups flour
 salt and  black pepper to taste
2 1/2 gal. milk
5 lbs. cheese, cubed
Cook macaroni as directed, until just tender. Drain well.
Make a thin white sauce, by melting butter, stir in flour, add milk slowly,
stirring carefully, and cooking slowly until slightly thickened.
Combine macaroni. and sauce, and add 2/3 of the cheese.
Spread into 5 greased 10 x 16 inch baking pans.
Sprinkle remaining cheese over top.
Top with buttered bread crumbs if desired.
Bake at 350° F. for about 30 minutes or until heated through and slightly browned.


Cheesy Pretzels ( Diabetic Recipe )

I love fresh out of the oven pretzals..
 
Makes 12 small or 6 large pretzels.

1-1/2 cups flour
1/2 cup shredded cheddar cheese
2/3 cup lowfat milk
2 Tbsp margarine
2 tsp baking powder
1 tsp sugar
1/2 tsp salt
Cooking spray
1 egg, beaten
Coarse or kosher salt

Preheat oven to 400°. Spray cooking sheet with cooking spray and set aside.
In a large bowl, combine all ingredients except egg and coarse or kosher salt. Remove dough from bowl and knead for 1 to 2 minutes on a lightly floured surface.Break dough into pieces and roll into thin ropes.  Twist into pretzel shapes or other shapes and place on prepared cookie sheet. Brush dough with beaten egg. Sprinkle with coarse salt.  Bake 10 to 15 minutes or until browned.

Nutritional Information (per small pretzel): 107 Cal; 4 g Total Fat; 13 g Carb; 4 g Protein.
Dietary Exchanges: 1 Bread; 1 Fat..


Shake and Take Mix ( Diabetic )

 

Makes 8 servings.

1-1/2 cups small fish cracker, any flavor
1-1/2 cups round oyster crackers
1 cup pretzels, any shape
1/4 package dry buttermilk salad dressing mix (do not prepare)
1 Tbsp oil

 Combine crackers and pretzels in large bowl or bag.  Mix together salad dressing mix and oil.  Pour dressing over dry ingredients.  Toss or shake well.  Store in airtight container. 
Nutritional Information (per serving): 145 Cal; 6 g Total Fat; 20 g Carb; 3 g Protein. 
Dietary Exchanges: 1 Bread; 1 Fat.

Sopaipillas

 
These little hollow pillows are awesome with butter and honey,, I have been making these for years and they are always good!
 
4 Cup Flour
2 Teaspoon Sugar
1/4 Cup Shortening or lard
1 Tablespoon Baking powder
1−1/2 Teaspoon Salt
1 1/4 Cup Water or more if needed
Sift dry ingredients together. Cut in shortening until crumbly. Add water
and mix until holds together. Knead 10−15 times until dough forms a smooth
ball. Cover and let set for 20 minutes. Divide dough into two parts. Roll
dough to 1/8" thickness on lightly floured board. Cut into 3" squares or
triangles. Do not allow to dry; cover those waiting to be fried. When ready
to fry, turn upside down so that surface on bottom while resting is on top
when frying. Fry in 3" hot oil until golden brown, turning once. Add only about
4 or 5 at a time to maintain proper temperature. Drain on paper towels.

Pork Carnitas

 
These are so so good...
 
4 Poblano Chiles; roasted and peeled
1 Onion; Medium, Cut in halves
1 Pound Center Loin Roast; boneless and cut into 2 X 1/4−inch strips
1 Clove Garlic; Finely Chopped
2 Teaspoon Vegetable Oil
2 Teaspoon Tomato Paste
Juice of one lemon
1/4 Teaspoon Salt
1/2 lb. plum tomatoes, finely chopped
Flour Or Corn Tortillas
Dairy Sour Cream
Cut chiles and onion halves lengthwise into
1/4−inch strips. Cook pork, chiles, onion and garlic in oil in a 10−inch
skillet over medium heat, stirring occasionally, until pork is no longer
pink, about 12 minutes. Stir in tomato paste, lemon juice, salt and tomatoes;
cook until hot. Serve with tortillas, Guacamole and sour cream.

Chalupas

I love Chalupas at Taco Bell, But home made ones are the best :)
 
Vegetable oil
12 Corn tortillas
2 cans Refried Beans
1/2 Pound Cheddar cheese (Mild), grated
1 Large Tomato, chopped small
3 Cup Lettuce, shredded fine

 In a small skillet, heat about 1/2 inch of vegetable oil. Test the oil for
proper temperature by putting in a small piece of tortilla. When the oil
reaches the temperature where it immediately begins to bubble frantically
over the tortilla as soon as it is put in the oil and the tortilla piece
becomes crisp quite quickly, you are ready to cook the chalupa shells. This
is important because there is nothing worse than a soggy chalupa shell which
results from the oil not being hot enough.
Fry tortillas completely flat on both sides until very crisp. Drain and keep
warm on a  paper towel covered cookie sheet in a warm oven.
Spread about 1/4 inch thick layer of refried beans on each fried tortilla.
Top with a generous amount of grated mild Cheddar cheese and about 1 T
chopped onion.
Place assembled chalupas on a cookie sheet and brown under broiler until
cheese melts. Watch them carefully under the broiler, they can burn quite
quickly. Top with shredded lettuce and tomato, picante sauce and serve.
 

Honey Spiced BBQ Sauce

 
 
1 1/4 Cup Catchup
2/3 Cup Salad oil
3/4 Cup Vinegar
5 Tablespoons Worcestershire sauce
3/4 Cup Honey
2 Tablespoon Dry mustard
1 Tbsp. Ginger, fresh grated
1 Lemon, sliced thinly
3 Tablespoons Butter
Put all ingredients in a saucepan and heat to blend together.
Remove lemon peel .Then baste..

RED DEVILS FOOD CAKE

 
 
Oh I do love Chocolate, anyway you fix it :)
 

1 2/3 cups sifted All Purpose flour
1 1/2 cups sugar
1 1/4 teaspoons soda
1 teaspoon salt
1/2 cup cocoa
1/2 cup shortening
1 cup milk
1 teaspoon vanilla
3 eggs
 
Grease and flour two 8 or 9" layer pans or 9"x12" oblong pan.

Sift  into bowl: flour, sugar, soda, salt and cocoa. Add: shortening, milk and vanilla. Beat 2 or 3 minutes. Add eggs - beat another  2 minutes.

Pour into prepared pans. Bake until cake tests done. Bake 8" layers for 35 to 40 minutes, 9" layers for 30 - 35 minutes, oblong about 45 minutes in 350 degrees oven.

EGGLESS, MILKLESS, BUTTERLESS CAKE (Poor Man's Cake)

 I made this cake in 1966 right after I got married

 
1 cup brown sugar
1 cup granulated sugar
1  cup lard
2 cups strong cold coffee
1/4 teaspoon cloves
2 cups raisins
1/4 teaspoon nutmeg
1 teaspoon cinnamon

Cook all the above ingredients together for 10 minutes. Do not try to cream together. When cool add: 3 1/2 cups flour sifted with 3 teaspoons soda and 1 teaspoon of salt. Bake in moderate 350 degrees oven for 30 - 35 minutes.

This cake is very moist ~ Super !

Purple Hull Peas

 
These are my favorite peas :)
 
1 qt. fresh shelled purple hull peas
1 ham hock or 3 strips of bacon cut in pieces
Salt and pepper to taste
 
Wash peas and put in enough water to to cover, Let come to a boil and let boil uncovered for about 10 minutes , or until the foamy stuff comes to the top, pour in a colander and rinse well to remove all the foam. Rinse pot out and put peas back in it,
Now add your ham hock , salt and pepper, cover with water and bring to a boul, let boil for about 45 minutes are until peas are tender when tasted.
 
Or
 
You can buy a bag of frozen purple hull peas, add ham hock , salt and pepper , cover with water and cook as directed on package :)

SOUR CREAM CHICKEN ENCHILADAS


If you like Mexican food at it's best, try this one !
2 ccans ofchicken,drained
1 pt. sour cream
2 cans cream of mushroom soup
1 small can chopped green chilies
½ c. chopped onions
1½ c. grated cheddar cheese
1 dozen corn tortillas

Dip tortillas in hot oil until soft. Drain tortillas on paper towel. Heat together the
chicken (drained), sour cream, mushroom soup and green chilies. Add about 2
tablespoons (a big glob) of above mixture to center of tortilla; add onions and
cheese, then roll up. Put tortillas in 13x9x2" baking dish. Pour remaining sour
cream mixture over top. Sprinkle with more grated cheese on top of casserole.
Bake at 350Āŗ for 30 minutes.

CORNBREAD PIE

Add a salad and your all set for s very good meal !!!
 
Cornbread Mix:

1 c. cornmeal
2 eggs
1 c. milk
½ tsp. soda
¾ tsp. salt
¼ c. bacon drippings
1 (No. 2) can cream-style corn

Meat mix:

1 lb. hamburger meat
4 hot peppers, chopped

½ lb. cheese, grated 1 onion, chopped OR ½ bell pepper, chopped
Mix cornmeal, eggs, milk, soda, salt, corn and bacon drippings and set aside.
Brown hamburger, onions and peppers. Grease baking dish, 9x13". Put half
cornmeal mix, then meat, then cheese, then rest of cornmeal mix. Bake at 425Āŗ
for 45 minutes. Spread with butter upon removing from oven. Serves 4-6.

FETTUCCINI ALFREDO

Easy and so good !!!
 
1 (8 oz.) pkg. cream cheese
1 stick margarine
¼ c. grated Parmesan cheese
½ c. milk
¼ c. chopped fresh parsley (optional)
8 oz. cooked fettuccini noodles

Combine ingredients (except noodles) in saucepan and stir over low heat until
well blended. Pour mixture over cooked noodles and toss lightly in bowl.

SHRIMP CREOLE

 
This one speaks for itself :)
 
Make a roux of about 3-4 tablespoons shortening, ½ cup flour and 2 teaspoons
salt. Brown until very brown.

Add:

1 can chopped onion
½ c. celery
½ bell pepper, chopped
Heat for about 5 minutes.
Add:

1 tsp. gumbo file
1 lb. shrimp
Cook for 20 minutes more. Serve over rice.

DEVIL DOGS

 
 
1 egg ½ c. milk
1 tbsp. Crisco, melted
¾ c. sifted flour
½ tsp. salt
½ tsp. baking powder
½ tsp. dry mustard
1/8 tsp. red pepper
6 to 8 frankfurters
¼ c. fine dry bread crumbs

Beat eggs slightly; add milk and melted Crisco in mixing bowl. Combine flour,
salt, baking powder and seasonings. Add egg mixture and beat well. Cut franks
into 1-inch pieces. Dip in crumbs then in batter. Fry in deep fryer.

DEPRESSION CAKE

 
This recipe is from 1929!

• 2 c. sugar
2 c. strong coffee
½ c. shortening
2 c. Sun-Maid raisins
1 apple, peeled and grated
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. each: cinnamon, allspice, cloves, and nutmeg
1 c. chopped walnuts or pecans
In large saucepan, simmer the first 5 ingredients for 10 minutes, stirring
occasionally. Cook for 10 minutes. Blend together the remaining ingredients and
stir into mixture. Pour batter into well-greased and floured 13x9" pan. Bake at
350Āŗ for 25 to 30 minutes or until toothpick inserted in center comes out clean.
Cool and dust with powdered sugar, if desired.
Note: 2 cups water may be substituted for the coffee. Diced candied frut
may be added for an easy fruit cake.

HOMEMADE VANILLA PUDDING

 
The thrill of cooking for me is to make it from scratch, just like my mom and grandmother did :)
 
2 c. milk
½ c. sugar
¾ c. sugar
4 Tbsp. flour
2 eggs
¼ stick oleo
¼ tsp. salt
1 tsp. vanilla
Stir together milk and ½ cup sugar; bring to a boil. Mix sugar, flour and eggs.
Slowly pour into first mixture until thickens. Add oleo, salt and vanilla. Pour
into favorite bowl or individual bowls. May add bananas and wafer cookies to
become banana pudding. Then dot with cherries and sprinkle with cherry juice.

PEANUT BRITTLE

I think I could live on this stuff ...lol
 
2 c. white sugar
1 c. white karo
1/8 lb. margarine
½ c. water

2 c. shelled peanuts
 
Cook until brittle or will crack in water. Remove from fire and add 1/8 lb.
margarine, 2 c. shelled peanuts. Return to fire and cook until light brown, stirring
constantly. Remove from fire, add 2 tsp. soda and 1 tsp. vanilla. Stir well. Pour
into shallow pan and let cool.

FRESH APPLE CAKE

I got this recipe from a friend in the early 80's.. it is a very good cake :)
 
1 c. oil
2 c. sugar
1 tsp. salt
1 c. chopped nuts
2 eggs
3 c. flour
1 tsp. cinnamon
1 tsp. soda
1 tsp. baking powder
2 tsp. vanilla
3 c. chopped Delicious apples

Beat oil, sugar and eggs. Mix dry ingredients together and sift into other
ingredients, adding 2 teaspoons vanilla. Mix in nuts and apples; bake in tube pan
for 80 minutes at 375Āŗ.

MANDARIN ORANGE CAKE

Theis is an awesome cake,,
 
1 box Duncan Hines yellow, butter cake mix
1 tsp. vanilla

4 eggs

½ c. cooking oil

1 (11 oz.) can mandarin oranges with juice

Frosting:

1 lg. carton Cool Whip

1 small box instant vanilla pudding mix

1 lg. can crushed pineapple with juice

Pour juice from oranges into mixing bowl. Add oil and eggs; beat well. Add
vanilla. Stir in cake mix just enough to blend. Add oranges. Pour into 3 wellgreased
and floured cake pans. Bake 20 minutes at 350Āŗ. Cool. Mix pineapple and
pudding; gently stir in Cool Whip. Frost between layers. Keep refrigerated.

EASY PIE CRUST

 
 
 
This pie crust is so easy, flaky and so good!
 Plus it just can't get easier then this one :)

 
1 c. all-purpose flour

1 stick melted margarine

2 tbsp. powdered sugar

Mix well. Put in pie plate then press to shape crust to pan. Use as any pie crust.
Pre-bake for pudding type pies and unbaked for pecan and fruit type pies.

BANANA SPLIT PIE

 
OMG, Rich , Yummy, Makes Your Taste Buds So Happy :)
 
1st Layer:
1 c. flour
1 c. nuts
1 stick melted oleo
Melt oleo. Mix with flour and nuts. Pat into bottom of a 9x13" pan. Bake at
350Āŗ for 20 minutes. Cool 1 hour.

2nd Layer:
2 (8 oz.) cream cheese
1 tsp. vanilla
1 box powdered sugar
Beat till creamy. Spread over crust.

3rd Layer:
5 bananas sliced over cream cheese mixture. Spread 1 large can crushed
pineapple (drained), over bananas. Cover pineapple with large Cool Whip.
Sprinkle with nuts and cherries if desired.

TEXAS HASH

 
All I can say is So, So Good !
 
3 large onions, sliced

1 large green pepper, minced

Cook in 3 Tbsp. fat until onions turn yellow.

Add 1 lb. ground beef.

Stir and fry until mixture falls apart.

Stir in:

2 c. canned tomatoes

1 c. uncooked rice or 1 c. uncooked noodles

1 tsp. chili powder

2 tsp. salt

¼ tsp. pepper

Cook 1 hour in 2-quart casserole in 350Āŗ oven with last 15 uncovered.

JEANNE?S MEATLOAF

This is the best meatloaf, something about the blend of the
catsup and Worcestershire Sauce that makes it awesome...
 
2 lbs. ground beef
2 eggs
1 medium onion, peeled and chopped
1 bell pepper, sliced in rings
6 slices of bread, wet
Salt and pepper to taste
catsup
Worcestershire Sauce
Carrots and potatoes ( Optional )

Mix all ingredients together; form into a loaf shape. Place in a long pan. Cut up
 Carrots and potatoes (if desired) and put around meat. LAy bell pepper rings on top of meatloaf then  Pour catsup and Worcestershire Sauce on top of the meat, use your judgement as to how much, I like it covered evenly myself; use the back of a spoon to spread evenly over the top. Bake at 350Āŗ for 1 hour or until done.

CUCUMBER QUICKIES

I love this stuff :)
 
6 cucumbers, sliced

¼ c. salt

2 T. oil

1 large onion, sliced thin

1 c. vinegar

Put cucumber slices in salt and let stand for 2 hours. Wash and drain. Mix all
other ingredients and add to cucumbers. Chill.

FRUIT DIP

8 oz. pkg. cream cheese

9 oz. container Cool Whip

Blend cream cheese ; then mix in Cool Whip. Dip with
apples, pineapple, grapes or any fruit of your choice.

CINNAMON PECANS

 
These are great around the holidays..
 
1 lb. pecan halves

1 tsp. salt

1 c. sugar

2 egg whites

2 T. cinnamon

Beat the egg whites until stiff peaks form. Fold in salt and vanilla. Mix sugar and
cinnamon in large ziplock bag. Fold pecans into egg white mixture and transfer
to the ziplock bag. Shake to coat. Bake in single layer on a cookie sheet at 350Āŗ
for 10 minutes. Stir once

CHEESEBURGER PIE

This is a favorite Dish... Good Stuff..
 
\1 lb. ground beef

1 c. chopped onion

½ tsp. salt

¼ tsp. pepper

1 ½ c. milk

3 eggs

¾ c. Bisquick

2 tomatoes, sliced

1 c. shredded cheese

Heat oven to 400Āŗ. Grease 10-ince deep pie plate. Brown and stir beef and onion
until brown. Drain. Stir in salt and pepper. Spread in pie plate. Beat milk, eggs
and Bisquick until smooth. Pour over meat. Bake 25 minutes. Top with tomatoes and cheese. Bake 5 to 8 minutes more (or until knife inserted in center
comes out clean), then enjoy!

Shred 1 head of cabbage and 6 carrots in a large bowl. Add 2 tbsp. vinegar, 1 tbsp. grated
onion, ¼ cup sugar and 3 to 4 tbsp. Miracle Whip. Let Chill.

• JEANNE'S POTATO SALAD
Boil 6 to 8 potatoes with 3 eggs. When done, peel and dice potatoes in a bowl.
Grate the boiled eggs in with the potatoes. Grate 1 onion and 1 dill pickle. Add a
small jar of chopped pimentos. Salt and pepper to taste. Add 3 or 4 tbsp Miracle
Whip (more if needed).

BAR-B-QUED WEINERS

 
 
1 lb. wieners

1 medium onion, chopped

½ c. catsup

½ c. water

¼ c. vinegar

Mix together catsup, water and vinegar. Pour over wieners and onion in heavy
skillet and cook for 45 minutes over low fire.

BUBBA?S BAKED PORK CHOPS

 
When Bubba (my husband) worked for the City of Austin Power Plant, he came
home with this recipe. I made it often. It's just as good with beef instead of pork!

Direction•
Place 6 to 8 pork chops in a 9"x12" pan. Salt and pepper to taste. Slice onion and
lay on top of chops. Dot with butter. Place a sheet of foil over pan and bake at
350Āŗ for 20 minutes. Remove foil and let cook another 10 minutes.

PEPPERONI BITES

Little Pizza Bites In A Pocket :)
 
1 c. shredded mozzarella cheese
½ c. chopped pepperoni

½ c. pizza sauce

2 pkgs. (10 each) refrigerated biscuits

1 Tbsp. milk

¼ c. grated Parmesan cheese

For filling: In a bowl combine mozzarella cheese, pepperoni and pizza sauce. Set
aside. Separate biscuits. Flatten biscuits to 3-inch circles. Place about 1 rounded
tablespoon of filling in the center of each circle. Bring edges of dough together.
Pinch to seal. Place, seam side down, on greased baking sheets. Brush with milk.
Sprinkle with Parmesan. Bake in a 350Āŗ oven for 12 to 15 minutes or until
golden. Serve warm.

SOUTH-OF-THE-BORDER DIP

 
Yummy Dip,,, Good For Any Occassion!
 
½ c. chopped onion

2 Tbsp. PARKAY margarine

1 lb. VELVEETA Mexican cheese, cubed

1 (16 oz.) can tomatoes, chopped and drained

NOTE: I like to use Ro-Tel tomatoes in this.

SautƩ onion in margarine. Add Velveeta and tomatoes; stir until cheese is melted.

Serve hot with tortilla chips.

JEANNE?S SQUASH CROQUETTES

 
I love squash anyway you fix it, but I think this is my favorite ...
 
6 yellow squash

2 eggs
 
1 c. crumbled cornbread

1 tbsp. minced onion

2 tbsp. oleo

½ c. cracker crumbs

Vegetable oil for frying

Mix well. Roll in cracker crumbs after squash has cooked in salt water. Drain.
Add other ingredients and beat with a fork. If you don't want to roll in cracker
crumbs, just spoon out into shallow oil and fry till golden.

ROAST AND VEGETABLES

 
 
 
1 nice size roast
6 carrots, peeled and chunked
6 potatoes, peeled and chunked
1 onion, peeled and chunked
1 can mushroom soup
1 pkg. dry onion soup mix
Place roast in roaster pan, place vegetables around meat. Mix soups and 1 cup
water; pour over meat and vegetables. Cover and bake at 350Āŗ for 1 to 1½ hours.

LINDA?S SALISBURY STEAK

 
 
My best friend Linda of 24 years makes this. So good!

Flour steak (chuck, round, cube) and fry in a small amount of oil just till browned, not done tho. Put
in crock-pot. Add a can of stewed tomatoes. Cook on low for about 4 hours.
Serve on rice or Mashed Potatoes. Salt and pepper to taste.
 
It is good plain, but if you want to dress it up alittle, add a diced bell pepper , and a chopped onion to the pot after you put the meat in..
 
Cook on low all day !!!  about 6 hours ..

EGGPLANT CASSEROLE

 
 
This recipe came from a neighbor's daughter back in the 1980s.
1 lb. sausage, hamburger, or leftover meat in gravy
2 cups tomatoes

1 tsp. chili powder

1 onion, chopped

1 garlic clove, minced

Salt and pepper to taste

Cook all the above ingredients together for 15 minutes. Set aside. Peel and slice
2 or 3 eggplants, brown in small amount of oil. Place in 9"x12" baking dish in
layers (eggplant, then meat mixture, ending with meat mixture on top). Sprinkle
with cheddar cheese and top with crushed saltine crackers. Bake till cheese melts
and crackers brown (about 20-30 minutes).

? FRIED SHRIMP

 
 
Another recipe from my sister. Yummy!
1 cup flour

½ tsp. sugar

1 egg, beaten

1 cup ice water

2 tbsp. oil

salt and cayenne pepper to taste

2 lbs. shrimp, peeled and de-veined

Oil for frying
 
Combine all ingredients except shrimp and oil. Beat well. Dry shrimp and dip in
batter. Fry in hot oil until golden.

Irish Stew

I have to be honest, I have never made Irish Stew, I have never even ate it.. But beings it is St.Patty's Day! I wanted to put it in here..
 
True Irish stew is always made with lamb. Onions, carrots, and potatoes round out this hearty dish. Make this stew the day before. It is even better reheated.

Prep Time: 15 minutes

Cook Time: 2 hours

Total Time: 2 hours, 15 minutes

Ingredients:

  • 1/2 pound thickly sliced bacon, diced
  • 6 pounds boneless lamb shoulder, cut into 2-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 2 cloves garlic, peeled and finely chopped
  • 1 large yellow onion, peeled and finely chopped
  • 1/2 cup water
  • 4 cups homemade beef stock or use canned
  • 2 teaspoons sugar
  • 4 cups carrots, cut into 1-inch pieces
  • 2 large yellow onions, peeled and sliced
  • 3 pounds potatoes, peeled, quartered, and cut into 1/2-inch pieces
  • 1 teaspoon dried thyme, whole
  • 1 bay leaf
  • 1/2 cup dry white wine
  • Chopped parsley

Preparation:

Using a large frying pan, saute the bacon. Reserve the fat and the bacon.

In a large mixing bowl place the lamb, salt, pepper, and flour. Toss to coat the meat evenly. Reheat the frying pan. In batches, toss the meat in the flour to coat evenly, then brown in the reserved bacon fat. If you run out of fat, use a little oil. Transfer the browned meat to a 10-quart stove top casserole, leaving about 1/4 cup of fat in the frying pan.

Add the garlic and yellow onion to the pan and saute until the onion begins to color a bit. Deglaze the frying pan with 1/2 cup of water and add the garlic-onion mixture to the casserole, along with the reserved bacon pieces, beef stock, and sugar. Cover and simmer for 1-1/2 hours, or until tender.

Add the carrots, onions, potatoes, thyme, bay leaf, and wine to the pot and simmer, covered, for about 20 minutes until the vegetables are tender. Check for salt and pepper before serving. Top with the parsley garnish before serving.

Yield: 12 servings

BLACKBERRY COBBLER

 
This has to be my favorite Cobbler, Hands Down!
 
Blackberry filling:
3 c. blackberries (fresh)

1 c. sugar

1 tsp. lemon juice

1 tbsp. butter

Batter:

3 tbsp. butter
4 tbsp. sugar
1 egg
½ tsp. vanilla

1 c. flour

2 tsp. baking powder

½ tsp. salt

Wash berries; drain gently and toss in sugar with lemon juice. Place berries in
bottom of cake pan and dot with butter. Cream butter and sugar together. Beat in
egg and vanilla. Sift dry ingredients together and beat by hand into batter.
Spread over blackberries and bake 25 to 30 minutes at 350Āŗ.

PINTO BEAN PIE

 
 
Another of my mom's awesome recipes! This pie tastes like a pecan pie! I mean it, it really does :)

• 1 c. refried beans

2 c. sugar

4 eggs

½ c. butter

1 tsp. vanilla

Mix all ingredients. Pour into unbaked pie crust, 9-inch. Bake at 325Āŗ for 1 hour and 15 minutes.
Note: Pecans may be sprinkled on top, before baking, if desired.

FRITO SALAD

 When I was a little girl ( around 8 ) there was this little drive in my sister and her friends went too, they served this salad, wxcept they put Hamburger Meat and cheese in it.. It was a full meal and my family loved it..

2 lbs. ground beef

1 onion, cut fine

1 can tomato sauce with cheese

tomato catsup

salt and pepper to taste

brown sugar
Fry until almost done; then add onions. Let cook until onions are yellow. Mix in
a bowl the tomato sauce, catsup, salt and pepper. Add just a little brown sugar.
Add a little water and cook slowly until you think it is done. It takes only a little while. Spoon on Hamburger Bunsm add a slice of onions and pickles..
 
 Can freeze ahead. Also chili pepper may be added. Put over macaroni or spaghetti.

KING RANCH CASSEROLE

Oh Yeah, This is another favorite dish.. We make this for our Girls Night Out Canasta Games.. Good, Good, Good!
 
1 chicken, boiled and boned
1 onion, chopped

2 c. grated cheddar cheese

1 doz. Corn tortillas

Sauce:
1 can cream of mushroom soup

1 can cream of chicken soup

½ can Ro-Tel tomatoes

1 can chicken broth

Butter casserole dish. Place layer of chicken and layer of tortillas, cut in small
pieces. Put in ½ of onions and ½ of sauce. Place another layer of chicken,
tortillas, onion and remainder of sauce. Bake 1 hour at 325Āŗ. When done, put
cheese on top. Melt slightly.

MEXICAN STEAK

What couldbe easier ?  And it is awesome..

Sear a pkg of steak
Make Sauce:

1 onion chopped

1 bell pepper chopped

1 can tomatoes

1 tsp. chili powder

Pour over steak and bake covered in 350Āŗ oven for 1 hour.

This is my own recipe for hot wings. I've used it for years and everyone seems to love them!

4 lbs. chicken wings

¼ cup butter
5 tbsp. Red Devil Hot Sauce
oil for frying

salt and pepper to taste

Fry wings in oil till brown. Drain on paper towel. Mix hot sauce and melted
butter together. Dip each wing in mixture and lay on a cookie sheet. When all
has been dipped, place in 350Āŗ oven for about 15 minutes to set the sauce.

ONION BAKED CHICKEN

 
This recipe came in my mom's electric bill back in the 60s! It is delicious.


1 fryer, cut into pieces

1 cup Bisquick

1 tsp. salt

½ tsp. pepper

¼ tsp. Paprika

4 tsp. Oleo

1 pkg. Dry Onion Soup Mix

2 cups hot water

Coat chicken pieces with bisquick, salt, pepper and paprika. Place in 9"x12" pan.
Dot with butter. Mix soup and hot water together; pour over chicken. Cover and
bake at 325Āŗ for 1½ hours.

JEANNE'S CHICKEN AND YELLOW RICE

 
This is my kids favorite chicken dish! I got this recipe from a lady in 1970. If you can't find hot oil, use vegetable oil and a jalapeno pepper (chopped). It tastes yummy hot or room temperature. Tammie and I love to eat it cold too!
4 or 5 boneless chicken breasts, skinned and cubed

1 tbsp. onion, chopped

salt and pepper to taste

2 pkg. yellow rice with saffron
1 hot pepper or 1 tsp. hot oil

3 tbsp. oil

Heat oil or hot oil and sautĆ© chicken in a heavy pan (with a lid). Fry chicken
and onion until chicken is done. Add rice and water as directed on rice package
(if you use 2 or 3 pkgs of rice, be sure you add that amount for each pkg!) Cook
for 20 to 30 minutes on low heat with lid on. Do NOT stir while cooking. Once
rice is fluffy and done, dish is ready.

EASY EGG ROLLS

I love chinese food, and I love to make these eggrolls :)
 
 
1 pkg. cole slaw mix

1 T. cornstarch

2 T. soy sauce

1 pkg. egg roll skins

2 to 3 boneless chicken, diced
Mix 1 tablespoon soy sauce with the cole slaw mix. Stir-fry in a pan with about 2
tablespoons of hot oil. Mix the other tablespoon of soy sauce with the cornstarch
and mix it with the chicken. Mix cole slaw mix and chicken. Mix together and
drain. Let cool for about 15 minutes. Place 2 tablespoons of this mixture in the
center of the egg roll skin and follow directions of the package for rolling. Deep
fry until golden brown.

JALAPENO CHEESE PIE

This is my cousins recipe, I always wish I had added more jalapeno's.. :)
 
2 lbs. grated Cheddar cheese

12 oz. jar sliced jalapeno peppers, diced

18 eggs, beaten

Combine all ingredients and pour into 13x9x2" baking dish. Bake at 325Āŗ for 35
minutes or until set. Do not let the top turn brown. Cool slightly and cut into
squares. Serve warm or cold, plain or with salsa and sour cream.

STEPHANIE?S BEST NACHOS EVER

 
Yum on this one.. it is my husbands cousins recipe...
 
1 pkg. taco seasoning mix

1 small pkg. Velveeta cheese

1 lb. hamburger meat

1 can refried beans

1 pkg. Mission Restaurant chips

Optional:

Chopped lettuce, onion and tomato

Cheddar cheese, grated

Sour cream

Picante sauce

Fry hamburger meat until done; add taco mix. Warm up refried beans. Cut up
Velveeta cheese into small cubes; place over fire and add just enough milk to
make it smooth. Lay out chips in 1 layer and add refried beans; then cover with
hamburger meat and finally add the cheese. When cooking the cheese you must
constantly stir it to keep it from burning. You can top with any of the options or
any of your own nacho favorites!

Porcupine Rice Meatballs

My Mom use to make this dish , and it is awesome..
Thanks Ross for reminding me of this one.

1 lb.      hamburger


1/2 cup       uncooked, regular rice


 

1/3 cup       onion, chopped


1 can     (15 oz.) tomato sauce


 

1-1/2 cups water, divided


1 tsp.     salt


1/2 tsp. celery salt


1/8 tsp. each garlic powder, pepper


2 tsp. Worcestershire® sauce

 

       Stovetop option:  Mix hamburger, rice, 1/2 cup water, onion, salt, celery salt, garlic powder and pepper.  Shape mixture by rounded tbsp. into 12 meatballs.  Cook meatballs in 10" skillet until brown on all sides; drain.  Mix remaining ingredients; pour over meatballs.  Heat to boiling; reduce heat.  Cover and simmer 45 minutes.  Add water during cooking, if necessary. 

 Makes 4-5 servings.

Oven Porcupines:  Heat oven to 350Āŗ F (175Āŗ C).  Place meatballs in 8x8" baking dish.  Mix remaining ingredients; pour over meatballs.  Cover and bake 45 minutes.  Uncover and cook 15 minutes longer.

CHEDDAR BISCUITS

 

There is nothing better then home-made biscuits..

4 cups flour

8 tsp baking powder

2 tsp sugar

1 tsp salt

1 cup chilled unsalted butter, cut into small cubes

1 3/4 cups chilled whipping cream

2 cups grated Mild cheddar cheese, packed


Preheat oven to 425°.Mix flour, baking powder, sugar and salt in processor. Add butter; using pulse button ,until mxture resembles coarse meal. Add 1 1/2 cups cream. Blend until dough comes together in moist ball, adding more cream by teaspoonfuls if dough is dry. Transfer to large bowl; gently mix in cheese.

Turn dough out onto lightly floured work surface. Knead 30 seconds to bring together. Pat out to 1-inch thickness. Using 2-inch round cookie cutter, cut out bisquits. Gather scraps and repeat.

Place biscuits on 2 large ungreased baking sheets. Bake until puffed and golden, about 15 min. Move  to rack and cool. (Can be made  hours ahead of time to use . Cool completely, cover and let stand at room temperature.)

Makes 2 Dozen




CHIPOTLE MAYONNAISE

 
Makes 1½ cups

2 tablespoons Dijon mustard

2 tablespoons honey

1 teaspoon chipotle adobado purƩe, or to taste

2 egg yolks

1 tablespoon fresh lemon juice

½ teaspoon salt

¾ cup olive oil

In a blender or food processor combine mustard, honey, chipotle,
egg yolks, lemon, and salt. Pulse on and off briefly
to mix. pour in oil in a thin, steady stream, processing until mixture thickens to a mayonnaise.Transfer to a bowl;
 
 cover and refrigerate for up to two days.

NOTE:
You can cheat a little by using 1 cup of Mayonnaise
and adding mustard, honey, cilantro, and chipotle adobado purƩe to it.

Chiles Rellenos

 
 
12 Large Mild, green chiles w/stems

1/2 Pound Jack cheese cut into long narrow, strips.
BATTER:

1 Cup All purpose flour

1 Teaspoon Baking powder

1/2 Teaspoon Salt

3/4 Cup Yellow or white cornmeal

1 Cup Buttermilk

2 Eggs, slightly beaten

Parch and peel chiles leaving stems on. Cut small slit below the stem,
removing seeds if desired. Insert strips of Jack cheese being careful not to split chile.

Prepare batter: Sift flour with baking powder and salt, then add cornmeal.
Blend buttermilk and slightly beaten eggs, then combine milk mixture with
dry mixture and blend together. Slightly moisten each chile with water dip
in plain flour, then in batter. Allow to drain slightly and drop in deep fat
which has been heated to 375 F.

Fry until golden. Drain on paper towels. Keep warm on platter in 300 F. oven
while completing frying and serve immediately.
I love to pour a cheese sauce over them :)

Sopapillas

 
We use to have a mexiczn place we got the Sopapilas, they are great with Butter and Honey.. yummmmmy
 
 
4 Cup Flour

2 Teaspoon Sugar

1/4 Cup Shortening or lard

1 Tablespoon Baking powder

1−1/2 Teaspoon Salt

1 1/4 Cup Water or more if needed

Sift dry ingredients together. Cut in shortening until crumbly. Add water
and mix until holds together. Knead 10−15 times until dough forms a smooth
ball. Cover and let set for 20 minutes. Divide dough into two parts. Roll
dough to 1/8" thickness on lightly floured board. Cut into 3" squares or
triangles. Do not allow to dry; cover those waiting to be fried. When ready
to fry, turn upside down so that surface on bottom while resting is on top
when frying. Fry in 3" hot oil until golden brown, turning once. Add only a
few at a time to maintain proper temperature. Drain on paper towels.

MY Very Own GOULASH

 
 
2 lbs. ground meat; sautƩ and drain grease off

Add 1 medium onion, chopped

2 Tbsp. minced garlic

1 Tbsp. chili powder

1 large can of V8 juice

2 cans tomato paste

salt and pepper to taste

Let this mixture simmer. Meanwhile, boil 1 lb. elbow macaroni in 2 quarts of
water. When done, drain water and pour macaroni into the meat mixture. Stir.
Let simmer a couple of minute then put lid on pot and turn fire off. Great served
with cornbread or saltine crackers.
NOTE: A can of Ro-Tel tomatoes can be added for a little heat.

? SAUSAGE BALLS

 
The first time I had these was when I was worling at Katie's Pantry and the assistant manager brought them to a christmas party.. OMG they are so good...Tammie has made them for Girls Night Out and there is never any left :)
 
1 lb. Owen's sausage

2 c. Bisquick
½ lb. grated cheese

¼ tsp. garlic salt

Mix together and shape into small balls. Place on ungreased cookie sheet.
 
Bake at 400Āŗ until well cooked (browned).
 
Put a toothpick in each one for easy handling..

CREAM CHEESE BALLS

 
I like these anytime !
 
2 (8 oz.) pkgs. Cream cheese, softened
1 small can crushed pineapple

2 tsp. chopped onion

1 Tbsp. seasoning salt

1 c. chopped nuts
 
Mix above ingredients; chill and form into ball. Serve with chips or crackers.

LITTLE PIZZAS

This are perfect little pizzas
 
 
English muffins

Mozzarella cheese

1 small can mushrooms

1 lb. hamburger meat

16 oz. tomato sauce

1 tsp. onion powder or flakes

1 tsp. salt

1 tsp. pepper

½ tsp. garlic salt

½ tsp. sugar (optional)

Brown hamburger meat. Stir seasoning into tomato sauce to make pizza sauce.
Split muffins open and spread on cookie sheet. Spoon pizza sauce on each half
and add hamburger and mushrooms (and any other toppings). Top with grated
Mozzarella. Cook 5 to 7 minutes at 400Āŗ until cheese melts.
Optional: Pepperoni, ripe olives, onion (cook with meat), sausage and green
pepper.

SOUTH-OF-THE-BORDER DIP

 
The is a great dip, I use it whenever I want tortilla chips and something special :)

6 Pork Chops
2 tbs Butter
1/2 cup Tomato Sauce
Salt and  Pepper to taste
 
1/4 cup Brown Sugar

 Brown chops with butter in large skillet. Place them in greased baking dish.  Sprinkle with salt and pepper and brown sugar over chops, then add tomato sauce. Cover and bake 1-1/4 hours at 350F.

Yield: 6 Servings

Susie's Beef Tips Over Rice or Potatoes

 
When I babysit for Suszie I would fix this and have dinner ready for them when they got home from work.. She liked Rice, He liked Potaoes, so I made both :)
 
1 pkg. cheap steak , cut into bite size pieces
 
1 can mushroom soup, plus 1soup of can water
 
1 pkg. onion dry soup mix
 
The dry soup is salty so I wouldn't add any until I tasted it after it is done.. Pepper can be added  sooner..
 
Put meat in a crockpot and turn on low.
 
Add soup, dry soup and water into a bowl and mix untill well blended, then pour over meat and place lid on pot and forget for 6 to 8 hours..
 
Serve over Rice Or Mashed Potatoes, and add a salad to dinner for a complete meal.

1 8-oz Cream Cheese
 
1 cup chopped pecans
 
In a bowl add the powdered lime jello to the cream cheese. With a mixer, mix on low to blend.
 
Add the water ( according to directions on the box). Hot first , then stir to desolve, then the cold water.. Add peacns and pour into a baking dish and refridgerate until set..
 
I spread the dish with pam before adding the jello mixture..
 
SO SO GOOD

JalapeƱo Mustard

 

I don't know about other places, but I do know most of us Texan's like it HOT AND SPICY !

2 cups   mustard 

1 small onion, finely chopped

1 or 2  Jalapeno  peppers, seeded, minced

salt and pepper to taste

       Combine first 5 ingredients, stirring well. Makes about 2 cups.

Parsley Potatoes

I love the garden when it produces all the fresh veggies, be it spring, summer or fall.. I love the veggies of the srason..There's  nothing like it !
 
 
1 lb. New Potatoes
 
1/2  stick butter
 
1/2 cup fresh parsley, chopped
 
Salt and pepper to taste
 
Scrub new potatoes and place in a 2 quart saucepan. Broil until fork tender.
Drain water and add the butter , parsley and salt and pepper. Stir to mix lightly...
 
The smaller new potatoes are best, meaning BIG is not always best :)

Suntea

I don't use sugar in my tea or coffee as far as that goes, but a lot of you do.. so if you don't just skip that part :)
 

. Place 3 family size (or 9 regular size) tea bags in a clean one gallon Suntea jar or 1 gallon pickle jar.
2. Add cold water to fill.

3. Cap the jar loosely and place in hot sunshine for 3 - 4 hours to brew.
4. Remove tea bags.
5. Flavor and sweeten to taste with sugar, fruit juice or sweetener.

6. Refrigerate unused portion within 5 hours of brewing.
**Remember: because this tea is not brewed with boiling water, it should be served within 48 hours.

Tea Ice Cubes:

You might also want to pour some of the tea into Ice Cube trays to make Tea Ice Cubes.
That way when the ice cubes melt they won't water down your tea.

All Day Macaroni & Cheese (Crockpot) Recipe

I have 3 crockpots, and I love them :)
 
 
8 ounces elbow macaroni, cooked and drained

1 (12 ounces) can evaporated milk

1-1/2 cups milk

2 eggs
4 cups shredded Cheddar cheese, divided

1 teaspoon salt

1/2 teaspoon black pepper
Place the cooked macaroni in a slow cooker that has been coated with nonstick vegetable spray.
Add the remaining ingredients except 1 cup of the cheese; mix well.
Sprinkle with remaining 1 cup cheese, then cover and cook on the Low setting for 5 to 6 hours, or until the mixture is firm and golden around the edges.
Do not remove the cover or stir until the macaroni has finished cooking.

Super Easy Fruit Salad

 
Nice and Easy
 
You can use any nice fruits that are in season in this easy recipe.
You could even change the flavor of canned pie filling; the combinations are endless.

2 cups sliced strawberries

2 cups green grapes
3 kiwi fruit, peeled and sliced

3 bananas, peeled and sliced

21 oz. can peach pie filling

In large bowl, combine strawberries, grapes, kiwi fruit, and bananas.
Gently mix in peach pie filling.
Chill for 1 hour before serving.
10 servings
