These are Miss Dixie's favorite !!!
1 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon white sugar
2 cups whole kernel corn
1 egg, lightly beaten
1 tablespoon shortening, melted
1/2 cup milk
3 cups vegetable oil
1 In a mixing bowl, combine flour, baking powder, salt
and sugar. Stir the corn kernels into the dry mixture.
2 In a separate mixing bowl, beat egg, melted shortening
and milk together. Pour the wet mixture into the dry and
stir until blended.
3 Heat oil in a heavy pot or deep fryer to 365 degrees F
(185 degrees C).
4 Drop spoonfuls of the fritter batter into the hot oil
and fry until golden; drain on paper towels
