Southern Fried Catfish

 
Daddy did a lot of hunting and fishing to keep food on the table.
There is nothing better then a ( Yellow ) Catfish right out of the Colorado River. Daddy knew how to catch and clean them and Mom knew how to cook them .
 
2 lbs. Catdish Filets
2 cups Yellow Cornmeal
Salt and Pepper to taste
 
Oil for frying
 
Heat  oil filling about 1/2 way up the side in a iron skillet, Have it good an hot before adding the fish.
 
Wet the filets in water,Salt the filets then dredge cornmeal That the salt and pepper has been added too also, don't over salt tho.
 
Now drop into the hot oil and the key to good fish is to let it get really golden..
 
When all the fish id done, pour all but about 1/2 cup of oil into a grease can ( or metal coffee can. Now add a handful of cornmeal to the remaining oil and stir until golden brown.. This is a gravy to spoon over mashed potatoes.. Awwww the sound of the hot cornmeal hitting the mashed potatoes and the smell it creates is AMAZING!
 
Be Very Careful Handling the hot cornmeal, it is extremely hot..
