This is another dish mom made a lot.. Hearty and good anytime..
4 or 5 large Idaho pototes
1 onion, chopped
1 ring of smoked sausage, ( like Hillshire Farms ) or whatever you like.
1/2 cup Oil, for frying or 1/4" deep in skillet
salt and pepper, to taste.
Peel potatoes and wash, dry with a cuptowel or paper towels.
Cut in half longways then each half in half then slice each quarter into 1'4 inch thick pieces crossways.
Have oil heated before adding the potatoes.
pour them all in the skillet and let them start browning before turning, after you turn them the first time, add the chopped onions, and let them cook with the potatoes.
Now add the sausage , slice in 1/4" round pieces ( it is already done so your just heating it with the potatoe/onions, add your salt and pepper and just fold it all over ever so often until the potatoes are tender and has a golden color.
DO NOT COVER WHILE COOKING..
