My Version of a Breakfast Burrito

 
Being from Texas I love the Tex-Mex flavors and alittle heat suits me just fine.. Of you don't like it hot then just don't add the jalapeno.. Great way to start the day!
 
 
2 eggs
2 sausage patties or
 2 strips bacon
1/4 onion, chopped
1 jalapeno, diced, optional
1 hashbrown pattie
2- 5" floured tortillas
1 slice cheese
picante sauce
 
Cut bacon into small pieces/break sausage patties up as they cook.
 
in a skillet ( no added grease ), cook the sausage/bacon till almost  done,
 
Add onions, jalapenos and hashbrowns to the meat and break it all up with your spatula..
 
Add the eggs and let it all cook together till eggs are done.
 
Lay torillas on a plate and cut the cheese in half laying one half on each tortilla.. Place in microwave for about 30 seconds to 1 minute ( depends on the mircowave, some heat faster then others ), just till the cheese is melted.
 
Spoon half of the egg mixture on each tortilla and add picante sauce and fold into burrito or taco form.
