FRUITCOCKTAIL CAKE

Mama use to make this often, it was one of my favorite cakes, still is.. along with all the other cakes :)

Preheat oven to 350º

1 13 oz. can fruit cocktail, drained ]

2 eggs, beaten

1-1/2 c sugar


2 c flour


2 tsp. baking soda

1 tsp. salt

c1/3 c light brown sugar

1/2 c pecans, chopped 

Drain fruit cocktail and set aside. Beat eggs and add sugar with a mixer. sift dry ingredients together in a large bowl. Add eggs, sugar and fruit cocktail to dry ingredients. Stir in chopped pecans. Pour mixture into a greased 9" x 12" pan. Sprinkle brown sugar over top. Bake 35-40 minutes.

  1. Can you use yellow cake mix and then just add fruit cocktail drained in it
