I could eat this whole batch by myself :) It is really good !
5 yellow squash, peeled and diced into chunks
1/2 onion, chopped fine
2 or 3 cornbread muffins, leftover prepared is great
1/4 c sugar
2 eggs
1/4 c flour
Salt and Pepper to taste
Oil with a pat of butter for frying
Boil squash and onions in just enough water to cover,Let cook till tender.
Pour our all but about 1/2 cup water. Add crumbled cornbread, sugar salt and pepper, stir to mix well then add eggs and add 1/4 c flour.
Have a slillet hot with a little oil and butter to cover bottom good, now spoon mixture into the oil with a tablespoon kinda mashing into a patty...
Let brown on one side before turning over, you want it a nice golden color..
