Tuna Salad

 

1 large can light tuna
1 small apple, chopped
1 small onion, chopped
1/2 cup pecans, chopped
1/4 clove garlic, chopped
1/4 tsp. curry powder
1/4 cup mayonnaise
2 boiled eggs, chopped
1/2 cup sweet pickle relish

Mix all of the ingredients together; add more mayonnaise if you like your salads creamy.

 Serve in pita bread, a hallowed out tomato or antelope or serve alone with your favorite crackers.

 I also prepare Tuna Patties--- use the above recipe and omit the mayonnaise, boiled eggs and relish.

 Add instead 2 beaten eggs and 1/4 cup flour.Form into patties and roll in cornmeal. Fry in a hot pan until golden brown on both sides.
