Oven Fried Chicken Tenders



1/4 cup pecans, chopped
2 cups toasted corn cereal, crushed
1 tsp. salt
1/2 tsp. chili powder
1/4 tsp. pepper
6 boneless chicken breast halves, cut into strips
1/4 cup olive oil

      Heat oven to 350ºF (175ºC). 
 Place pecans in a small microwave-safe bowl. 
 Microwave on High 1.5 - 2 minutes to toast.
  In a medium bowl, combine crushed cereal,
 toasted pecans, salt, chili powder, and pepper;
 set aside.  Cut each chicken breast into 4 tenders.
  Dip each chicken tender in oil,
 then coat with seasoned cereal crumbs.
  Place tenders in well-greased 9x13" glass baking dish. 
 Bake 25 minutes.
