Lemon Pie

 
½ cup sugar

4 Table. sifted flour

½ cup scalded Milk

Juice of 1 lemon and rind

1 egg yolk

Dash of salt

1 T butter

Combine sugar and flour in saucepan Mix well
Add cooled, scalded Milk, lemon juice and slightly beaten egg yolk
Cook over Med heat until thick stirring constantly,
Remove from heat
Add Butter and lemon rind
Cool
Pour in cooked pie shell.
