Finger Steaks

 1 c. flour
 1 tsp. season salt
 1/4 tsp. cayenne pepper (optional)
 1c buttermilk
 round steak sirloin steak or chicken breast

 Cut steak into strips about 1 inch wide. Mix all dry ingredients. Dip strips
 in flour mixture, dip into buttermilk and roll in flour mixture again. Fry over
 moderate heat and do not crowed skillet. Cook until browned. Drain well
 and serve with your favorite dipping sauces.
 

 Make these ahead & freeze them, let them thaw a bit & then fry. You can also use round steak that
has been soaked in a tenderizer marinade.  These keep well and are easy to make.
