Cheesy Volcano Meatball Sub

1 lb lean ground beef
6 Ritz crackers, crushed
1/4 cup grated Parmesan cheese
3/4 cup shaghetti sauce, divided
12 Cheddar Cheese cubes
4 sub buns

Preheat oven to 400 degrees.

Spray a shallow baking pan with cooking spray.

Mix meat, cracker crumbs, parmesan cheese, and 1/4 cup of the spaghetti sauce in a bowl.

Shape into meatballs, using about 2 Tablespoons of the meat mixture for each.

Place 2 inches apart in the prepared pan.

Place in cheese cube deeply into the center of each meatball.

Bake 14 minutes or until cooked through.

Meanwhile, microwave the remaining spaghetti sauce in a microwavable bowl for 30 seconds.

Spoon sauce evenly onto the buns.

Fill with 3 meatballs each.

Weight Watchers points - 11 for 3 meatballs (if cheese is not reduced fat or fat free).
