Breakfast Sausage Casserole

1-1/2 to 2 lbs. sausage
10 slices of bread lightly toasted & cubed or Croutons
6 oz. sliced mushrooms
1 small onion chopped
12 eggs
2 cups milk
1 stick margarine/butter ~ melted
8 oz. shredded cheddar cheese
6 oz. crumbled feta cheese
Remove sausage from casing and brown in skillet with onion.
Drain off excess fat.
Spread croutons along bottom of greased casserole dish such
as a 9 x 13 baking dish or larger.
Layer sausage and onion mixture on top of croutons.
Then add mushrooms next.
Beat together eggs, milk and melted butter.
Pour egg mixture over casserole and top with shredded
cheddar cheese and feta cheese.
Refrigerate over night.
Bake at 350 degrees for 1 hour.
