Bananas Foster Cheesecake

 

This recipe was handed down to me from a friend..
Awesome!

1 1/2 C. graham cracker crumbs
6 T. sugar
1/2 C. unsalted butter melted

Cheesecake Filling:

3 lbs. cream cheese softened
1 1/2 C. firmly packed brown sugar
3 T. cornstarch
1 1/2 t. cinnamon
6 eggs
2 egg yolks
1 1/3 C. mashed bananas
6 T. rum
4 t. vanilla

Heat oven to 325°F. In small bowl, combine graham cracker crumbs, sugar and butter until well mixed. Press evenly in bottom of a long baking pan. In large bowl, combine cream cheese, brown sugar, cornstarch and cinnamon until smooth. Add eggs and egg yolks one at a time, beating well after each addition. Beat in all remaining ingredients. Pour into crust, (Pan will be very full.) Bake at 325°F. for 55 to 65 minutes or until center is firm to the touch. Cool completely before serving. Store in refrigerator
