Okra-Shrimp Gumbo

 
1 slice (thin) ham
4 cups okra; sliced thinly
2 cups chopped onions
2 cloves garlic; chopped
3 tsp. chopped parsley
1 can (8 oz.) tomato sauce
2 lb. fresh shrimp
4 cups water
1 tsp. seafood seasoning, optional
1/2 tsp. each red pepper, pepper
1 tsp. salt
1 batch cooked rice
Cut ham into small pieces.  Sautè lightly in a skillet.  Add okra,
brown lightly, stirring constantly.  Add onions, garlic, parsley and tomato sauce; let simmer a few minutes.  Add shrimp, water, s
eafood seasoning, red pepper, salt, and pepper.  Let cook
1 hour over very slow heat.  Serve over cooked rice.  Makes 8 servings.
