1 1/2 c. all-purpose flour
2 tsp. baking powder
1 c. milk
2 (16 oz. each) cans sliced peaches, drained well (reserve 2/3 c. liquid) or 6 fresh peaches, skinned & simmered 5 min. on stove in 1 to 2 c. water
2 (8 oz. each) cream cheese, room temp.
2 tbsp. sugar
2 pkgs. vanilla pudding (NOT instant)
2 eggs, beaten
6 tbsp. melted butter
1 c. sugar
1 tsp. cinnamon
Preheat oven to 350 degrees. Grease 9 x 13 inch pan. Stir together flour, pudding and baking powder. Combine eggs, milk and butter. Add to dry ingredients. Mix well and spread in greased pan. Chop peaches and sprinkle atop batter.
Beat together cream cheese, 1 cup sugar and reserved 2/3 cup peach syrup. Pour atop peaches. Combine 2 tablespoons sugar and cinnamon. Sprinkle over all evenly. Bake for 45 minutes. Cool well before serving. Refrigerate leftovers."
