Texas Style Chicken Salad And Cucumber/Dill Dressing

Chunky Cucumber Dill Dressing


3/4 cup + 2 tablespoons nonfat plain yogurt
3 tablespoons fresh dill, chopped
2 teaspoons sugar
1/8 teaspoon salt
1/8 teaspoon pepper
2 teaspoons lemon juice
1 cup cucumber, peeled

Peel cucumber and chop into tiny chunks. In a blender or food processor blend half of the cucumber with all other ingredients. Stir in remaining half cup of cucumber. Chill or serve over green salad or chicken salad.
Serves 6 - 31 calories per serving (approximately 2 tablespoons)



Ro*tel Chicken Salad
 
BR> 2 lb cooked chicken; cube
3 Ribs celery; chop
1 Onion; chop
2 Yellow or orange bell-peppers; chop
1/2 c Lg pitted olives; slice
1/4 c Lightly toasted pine nuts;-sliced
1 tb Lime peel; grate
1 tb Lime juice
10 oz Can RO*TEL Diced Tomatoes & Green Chiles
1/2 c Mayonnaise
1/2 c Dairy sour cream
1/2 ts Salt

In a large bowl, combine all ingredients.
