Buttermilk Pie

This is one of my fave pies .. :)
 
1/2 cup butter or margarine, at room temperature
1-1/3 cups sugar (can used half sugar, half Alternate)
3 eggs, separated, at room temp.
3 tbsp. flour

1-1/2 cups buttermilk, at room temperature

1 tbsp. lemon juice

1 tsp. finely grated lemon zest

1/2 tsp. ground nutmeg

pinch salt

1 (9") pie shell, or make your own favorite

 
    Heat oven to 325ºF . 
 
 Cream butter and sugar; add egg yolks, beating after
each addition.
 
  Beat in flour and buttermilk;
 
 add lemon juice, lemon zest, nutmeg and a pinch of salt. 
 
 Beat egg whites until stiff; fold into filling.
 
  Pour filling into pie shell; cook in center of oven until
custard is set and slightly brown about 1 hour
 (maybe a bit less/more for your oven.) 
 
 Makes 6-8 servings.
