I am not crazy about traditional fruitcakes, but I love this one..
:
2 cups each water, raisins
1 cup unsweetened applesauce
2 eggs
2 tbsp. sugar or liquid sweetener
3/4 cup cooking oil
1 tsp. baking soda
2 cups flour
1-1/4 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
1 cup pecans

Heat oven to 350ºF . Cook raisins in water until tender and water is gone. Add applesauce, eggs, sweetener and oil. Mix well. Blend in soda, flour, cinnamon and nutmeg, sifted together. Add vanilla. Pour into greased loaf pan. Bake about 1 hour.
