Hearty Potato Soup

 
 
6 potatoes, sliced
2 carrots, diced
6 celery stalks, diced
2 qt. water
1 onion, chopped
6 T. butter
6 T. all purpose flour
1 t. salt
1/2 t. pepper
1 1/2 c. milk

In 2 qt. water, cook together potatoes, carrots and celery for 20 minutes.  In skillet fry onion in butter until soft. Stir in flour, pepper and salt and add milk until it thickens; add to veggies.
