COCONUT CAKE

 
Another Awesome Cake!
 

 
1 Yellow Cake Mix
2 packages frozen coconut
2 pints sour cream
2 cups sugar

Prepare icing first:  The night before, place sour cream, coconut (still frozen), and sugar in crock pot on low.  Do not stir ! !  Let cook until fairly clear and bubbly.  This will take several hours.
Prepare cake mix according to package directions.  Bake in  8 or 9 inch round pans. When cake is cool, use serrated knife to split layers into  two so that you have 4 layers.  Spoon icing (coconut glaze) between layers and around sides and on top of cake.  It will be runny.   Let cake chill for a couple of hours and you will have the moistest, richest, coconut cake that you have ever had.
