Peppermint Hot Chocolate

 

2 oz.     semisweet chocolate, about

1/3 cup chocolate chips

4 cups   skim milk

1/4 cup       each cocoa powder, sugar


1/8 tsp.       peppermint extract


optional       each whipped cream, candy canes


       Combine chocolate, milk,

 cocoa powder and peppermint in a saucepan

 and heat over medium-high heat. 

 Whisk until mixture comes to a boil

 and chocolate is dissolved. 

Ladle hot chocolate into mugs. 

 Serve with fresh whipped cream and

a candy cane, if desired.  Makes 4 servings.
