Omelette Casserole

 
 

12 eggs

1 cups sour cream
1/2 cup melted butter, melted
1 cups chopped tomatoes

1/2 green bell pepper, chopped

1/2 small onion, chopped

1 pounds ham,or sausage (chopped ham-crumble sausage) if using sausage, precook and strain grease.

1 pounds Velveta cheese, shredded

Beat eggs in mixer bowl until lemon colored.  Add sour cream and
butter.  Beat at medium speed for two minutes or until smooth.
Stir in drained tomatoes, green pepper, onion, ham/sausage and cheese.  Spoon
into a greased 9x13" baking pans.  Bake at 325*  for one hour.
This makes 12 servings, but you can adjust recipe to double ( 24 servings use 2 pans )
 
Any size just by changing amounts!!!
