Fresh Tomato Sauce

I love fresh made everything :)
 
2 oz. olive oil
 
8 oz. onions, 1/4" dice
 
4 oz. celery, 1/4" dice

2 oz. carrots, 1/4" dice

 
2 cloves garlic, minced
 
48 oz. tomato concasse, peeled, seeded, diced 1/4"

1 tsp. salt

1/8 tsp. white pepper

1 tbsp. each basil, chopped parsley

 
       Assemble all ingredients and equipment needed to prepare.  Heat a sauce pot over medium heat; add oil and heat 1 minute.  Add onions, celery, carrots and garlic, sweat vegetables until onions are translucent. About 3 - 5 minutes.  Add tomato concassé and simmer approximately 5 - 10 minutes, until flavor has developed and correct consistency is reached.  Adjust seasoning with salt and white pepper, stir in basil and parsley.
