7 ounces Elbow macaroni -- cooked and
1/2 cup Chopped green pepper
1/2 cup Mayonnaise
2 ounces Jar chopped pimentos -- drained
Lettuce leaves Paprika, optional
In a bowl, combine egg salad ( Recipe Below ), macaroni,
green pepper, mayonnaise and
pimentos. Cover and chill.
For each serving, spoon about
3/4 cup onto a lettuce leaf.
Sprinkle with paprika, if desired.
Old Fashioned Egg Salad
1/4 cup mayonnaise
2 teaspoons lemon juice
1 teaspoon dried minced onion or
finely diced red onion
1/4 teaspoon salt 1/4 teaspoon pepper
6 hard boiled eggs, chopped
1/2 cup finely chopped celery
In a bowl, combine mayonnaise,lemon juice,
onion, salt and pepper.
Stir in eggs and celery.
Cover and chill.
