SASSY CAESAR SALAD


2 tbs red wine vinegar
1 clove garlic, peeled and chopped
1 1/2 tsp anchovy paste
1/3 cup olive oil
1 head lettuce, torn into pieces
1 small head radicchio, torn into pieces
1 cup halved red and/or yellow grape tomatoes
1/2 cup seasoned croutons
2 tbs grated Parmesan cheese

In bowl, whisk together vinegar, garlic and anchovy paste, add salt and pepper if desired. Whisk in oil. In bowl, combine lettuce, radicchio and tomatoes. Drizzle dressing over salad, toss to coat. Top with croutons and sprinkle with cheese.
 
 MAKES 8 SERVINGS.
