Shortcut Chicken Fried Rice


1 chopped onion
1 handful chopped button mushrooms
2 packs microwave rice (or cook your own)
leftover cooked chicken (chopped up)
1 can (10-1/2 oz.) sweetcorn, drained
chopped cherry tomatoes

      Soften onion and mushrooms in a little butter or oil.  Chop chicken pieces and add to frying pan.  Cook rice in microwave 2 minutes.  (Can use 1 pack of egg fried rice and 1 pack vegetable rice.)  Add rice to pan, along with tomatoes, sweet corn and cook for 5 minutes.  Serve and enjoy!
