Perfect Stovetop Popcorn

1/4 cup coconut oil (or canola)
2/3 cup popcorn kernels
3 tbsp. butter, melted
2 tbsp. honey
1-1/2 tsp. sea salt

       Add coconut oil and 3 kernels popcorn to a large pot.  (Can use Dutch oven.) 

Cover, cook over medium-high heat until all 3 kernels pop.  Take the 3 kernels out of pot.  Add rest of the popcorn kernels.  Cover, take pot off of the heat.  Wait 30 seconds.  Put pot back on the heat.  Cook, shaking pot occasionally, until popping slows down.  After about 2 minutes, and popping has slowed down, take the lid off pot.  This lets steam out, keeps the popcorn crisp.  While popcorn is popping, melt butter and add honey.  Pour over popcorn, sprinkle with salt.  Toss until completely coated.  Can also do this in a large paper bag.
