A to Z Bread



2 cups sugar

1-cup vegetable or canola oil

3 eggs

2 cups A to Z ingredients (see list below) one choice or more from list = 2 cups)

1 tbsp. vanilla extract or 1/2 tbsp. vanilla extract and 1/2 tbsp. other extract

3 cups all-purpose flour

2 tsp. ground cinnamon or mixture of cinnamon and another sweet spice (mace,

         allspice, pumpkin pie spice, cloves, nutmeg)

1 tsp. each baking powder, baking soda, salt

1 cup chopped nuts, optional

A to Z Ingredients:
 
apples, peeled, shredded
applesauce
apricots, dried, chopped
banana, mashed
carrots, shredded
coconut
dates, pitted, chopped
figs, dried, chopped
grapes,  seedless, chopped
oranges, peeled, chopped
peaches, peeled, chopped
pears, peeled, chopped
pineapple, canned, crushed, drained
prunes, pitted, chopped
pumpkin, canned
raisins
sultanas, golden raisins
dried cranberries
dried blueberries
raspberries, unsweetened, fresh or frozen

preserves (jam or jelly), omit 1 cup sugar above
eggplant, shredded
honey (omit sugar if using)
lemon juice (not over 1/2 cup)
marmalade, omit 1 cup sugar
mincemeat
tapioca, cooked
tomatoes (only use 1/2 cup sugar)
yogurt, plain or flavored

      Heat oven to 325ºF (165ºC).  In a mixing bowl, combine sugar, oil and eggs; mix well.  Stir in A - Z ingredients of your choice and extract(s).  Combine flour, cinnamon, baking powder, baking soda and salt; stir into liquid ingredients just until moistened.  Stir in nuts.  Pour into 2 greased (8x4x2") loaf pans.  Bake 55 - 65 minutes, or until a wood pick inserted near center comes out clean.  Cool in pan 10 minutes before removing to a wire rack to cool.  Makes 2 loaves.
